Tonight started my quest to cook foods other than baked goods with my KitchenAid mixer. Searching my fridge for ingredients, I took to www.allrecipes.com to get the fire lit. Did you know that you can type in the ingredients you have and All Recipes will match those ingredients to recipes on their website? Awesome! Here I am, sitting with a block of expensive Boar’s Head Swiss Cheese and have no idea how to incorporate into my dinner, except to make nachos or grilled cheese sandwiches.
First thing to catch my eye were the Bacon Tomato Cups. Since bacon makes anything taste good, I decided to choose that recipe. Calling for just tomatoes, bacon, mayonnaise, onions, swiss cheese and ready-made biscuit dough, I went ahead added a few other veggies that were laying around in the fridge; mushrooms, cucumber, substitute regular onions for green onions and throw away the idea of using mayo for sour cream.
Chopping and sizzling bacon, put everything into the KitchenAid, mixed for about 30 seconds and spooned the ingredients into the dough cups formed into the cupcake pan. Since I used the full biscuit for each cup (recipe called to break each one in half), it took a little bit longer to bake. About 10 minutes more, before I was confident that the dough had baked through enough.
Kitchen started to smell amazing, and that is when I knew I had done something right! Not knowing if my substitutions and additions would measure up to the original, I believe it surpassed. Nothing stood out to be a “main” ingredient of taste, which I enjoyed. All in all, a great start to mixing it up with the mixer.
Hope you enjoy the recipe and make it your own! By the way, I didn’t really use measurements. But figure a half cup for everything and around 10 slices of bacon if you aren’t vegetarian.
Recipe:
Boars Head Swiss Cheese - grated
Handfull of Mushrooms
Green Onions (I used half of the bushel)
2 Tomatoes
2 scoops sour cream instead of mayonnaise
Bacon (omit if vegetarian)
1 Cucumber
Refrigerated biscuit dough
Slice, dice and mix in your KitchenAid!
Form dough into cups in a cupcake pan (if not nonstick, spray pam before placing in dough).
Spoon in mixture.
Heat oven to 375.
Bake for 12-18 minutes - or until biscuit is golden brown. Use a toothpick to determine if biscuit is done.
